- Stale black rye bread — several slices (fermentation base)
- Water — a large jug (liquid)
- Sourdough starter or yeast — a little (ferment)
- Sugar or honey — as much as you like (feed fermentation)
- Raisins — a handful (fizz (optional))
Ingredients
- Black rye bread — 300 g (fermentation base)
- Water — 2 L (liquid)
- Active dry yeast — 1/2 tsp (ferment)
- Sugar — 4 tbsp (feed fermentation)
- Raisins — 1 handful (natural fizz)
- Mint or blackcurrant leaves (optional) — a few (flavor)
Method
- Toast the bread in the oven until well browned (not burnt).
- Cover with boiling water in a large container and let steep for 6–8 hours.
- Strain, add sugar, then stir in the yeast once the liquid is lukewarm.
- Add raisins, cover with a cloth, and let ferment for 1–2 days at room temperature.
- Strain, bottle with a few raisins, and refrigerate for 1 day to develop fizz.
- Serve well chilled.
How it was made : Kvass has been attested for centuries in Russia and Ukraine; every household had its bread starter. Low in alcohol, it quenched thirst, used up stale bread, and was sold from barrels on the streets in summer.
The contemporary twist : Served over ice with a mint leaf and a splash of blackcurrant juice, as an artisanal non-alcoholic alternative to industrial sodas.
