A yeasted dough rolled around a thick paste of ground poppy seeds, honey, and dried fruit. Sliced, the roll reveals its dark and golden spiral—the pastry of happy days.
Poppy seeds, in our home, are no trifle: they are a whole labor. You scald them, grind them again and again until they release their black milk, and the house smells of warm honey for hours. As a child, I watched for the dark spiral in the slice as if it were a treasure. It is the cake of festive days—and even a revolutionary, believe me, has the right to close her eyes before something so sweet.

Ingredients
- Ground blue poppy seeds — 250 g (signature filling)
- Honey — 100 g (sweetener)
- All-purpose flour — 400 g (dough)
- Fresh yeast — 20 g (leavening)
- Warm milk — 150 ml (dough)
- Butter — 80 g (richness)
- Eggs — 2 (+1 yolk for glaze) (binder)
- Raisins and candied orange peel — 80 g (filling)
Method
- Knead together flour, yeast dissolved in warm milk, softened butter, eggs, and a pinch of salt; let rise 1 hour.
- Scald ground poppy seeds with a little hot milk and honey, thicken over low heat, add raisins and peel; let cool.
- Roll out dough into a rectangle, spread poppy paste evenly, roll tightly lengthwise.
- Let rise 30 min, brush with egg yolk.
- Bake at 180°C for 35–40 min until golden. Cool before slicing to reveal the spiral.
How it was made : Poppy seeds, a symbol of abundance, were ground by hand in a special mill (makutra) or pounded in a mortar for hours. Indispensable for winter holidays in Poland, they belonged equally to Christian and Jewish tables.
The contemporary twist : A thin sugar glaze and a few candied orange zest strips on top, sliced on the bias to expose the spiral.
