We collected it from the mouths of the people and set it down in our collection. At our fairs, they really sold these honey-spiced cakes, golden and fragrant, that children coveted. So make a little house, glaze it white, and offer it to the children: let the tale, for once, end sweetly.

Why this dish? How to evoke the Grimms without the gingerbread house of Hansel and Gretel? This tale, collected in their 'Kinder- und Hausmärchen', made immortal the German fairground treat: honey-spiced gingerbread sold at markets and built into little houses.

Ingredients (period version)
- Honey — a good dose (sugar and binder)
- Rye and wheat flour — in mixed parts (base)
- Cinnamon, clove, ginger, nutmeg — to taste (signature spices)
- Potash (old leavening) — a pinch (leavening)
- Egg and candied peel — as needed (richness and flavor)
Ingredients
- Honey — 250 g (sugar and binder)
- All-purpose flour — 500 g (base)
- Mixed spice (cinnamon, clove, ginger, nutmeg) — 2 tbsp (signature spices)
- Baking soda — 1 tsp (leavening)
- Egg — 1 (binder)
- Powdered sugar + 1 egg white — 150 g (icing for assembly)
Method
- Warm the honey, mix with spices, then with flour, baking soda, and egg to form a firm dough.
- Let the dough rest for a few hours (ideally overnight) in a cool place.
- Roll out to 5 mm, cut walls, gables, and roof panels, bake at 175°C for 10 to 12 minutes.
- Prepare the icing by beating the egg white with powdered sugar until thick.
- Assemble the house by gluing pieces with icing, let harden before decorating.
How it was made : Honey gingerbread (Lebkuchen) is a very old German fairground specialty, linked to trading cities like Nuremberg. Lacking modern chemical leaveners, the dough was raised with potash or hartshorn salt ('Hirschhornsalz') and left to mature for a long time.
The contemporary twist : Decorate the house with icing in a 'forest stone' style and set it on a bed of brown sugar imitating the pebble path from the tale.
