You surely know the story of those two children lost in the forest, who found a house made entirely of gingerbread and sugar. We collected it from the mouths of the people and set it down in our collection. At our fairs, they really sold these honey-spiced cakes, golden and fragrant, that children coveted. So make a little house, glaze it white, and offer it to the children: let the tale, for once, end sweetly.

  • Cinnamon, clove, ginger, nutmegto taste (signature spices)
  • Potash (old leavening)a pinch (leavening)
  • Egg and candied peelas needed (richness and flavor)
How it was made : Honey gingerbread (Lebkuchen) is a very old German fairground specialty, linked to trading cities like Nuremberg. Lacking modern chemical leaveners, the dough was raised with potash or hartshorn salt ('Hirschhornsalz') and left to mature for a long time.
