Why this dish? Stark crossed desert expanses where one had to carry enough to last days. Pitted dates, kneaded and pressed into a compact block, were the immemorial caravan provision—light, durable, calorie-dense.

Pitted dates crushed into a dense paste with a little toasted seeds, pressed into a block or balls. It does not spoil, is carried in a leather pouch, and provides a concentrated sugar and energy boost for walking.

Before a long crossing, one prepares one's supply with care, for the desert does not forgive lack of foresight. I saw the caravan men crush dates into a compact mass which they wrapped in leather: it weighs almost nothing and nourishes for a long time. I always slipped some into my luggage, next to my notebook and camera. A ball of this dark paste, slowly melting under the tooth, and you find the strength to walk to the next well.

Ingredients

How it was made : Ajwa and other pressed date pastes are attested throughout Arabia as caravan and pilgrimage food: they were carried in leather bags or baskets, sometimes mixed with toasted barley flour to make a true portable meal. They are the ancestor of our energy bars.
