- Ripe pitted dates — in abundance (sweet base)
- Toasted sesame seeds — a handful (binder and flavor)

- Soft pitted dates (Deglet Nour or Medjool) — 300 g (sweet base)
- Toasted sesame seeds — 3 tbsp (binder and flavor)
- Chopped almonds or walnuts — 50 g (texture and energy)
- Ghee — 1 tbsp (binder)
- Ground cardamom — 1 pinch (signature flavor)
Method
- Mash the pitted dates with a pestle or in a food processor until a thick, smooth paste forms.
- Mix in melted ghee, cardamom, toasted sesame and chopped nuts.
- Knead by hand until a compact mass holds together.
- Press firmly into a mold or roll into small balls.
- Let firm up in a cool place; store in a cloth or container—the paste keeps for several weeks.
How it was made : Ajwa and other pressed date pastes are attested throughout Arabia as caravan and pilgrimage food: they were carried in leather bags or baskets, sometimes mixed with toasted barley flour to make a true portable meal. They are the ancestor of our energy bars.
The contemporary twist : Roll the balls in sesame or shredded coconut and present them as 'desert energy balls'—the explorer's snack, 2026 edition.
