Why this dish? For grand occasions and Swedish winter holidays, a wreath of saffron-golden dough, scented with cardamom, was braided—the showpiece pastry of childhood and celebrations. To honor the singer celebrated in all the courts of Europe with a festive bread from her native land is to give her back a piece of the Sweden she carried everywhere.

On feast days, we would braid a beautiful golden wreath at home, its dough tinted with saffron and all fragrant with cardamom. I remember the saffron threads we would infuse to give the crumb that winter-sun color, and the almonds we would scatter on top. It was placed at the center of the table, and each person would break off a piece. Whatever hall I was acclaimed in, it was this scent that brought me back, in an instant, to the celebrations of my country.

- Wheat flour — as needed (structure)
- Saffron — a few threads (color and flavor)
- Ground cardamom — generously (flavor (signature))

- Eggs — one or two (richness and glaze)
- Almonds and sugar — for topping (garnish)
Ingredients
- All-purpose flour — 500 g (structure)
- Saffron — 1 dose (0.5 g) (color and flavor)
- Ground green cardamom — 1.5 tsp (flavor (signature))
- Warm milk — 25 cl (softness)
- Soft butter — 100 g (softness)
- Fresh baker's yeast — 25 g (leavening)
- Sugar — 100 g (sweetness)
- Egg — 1 (+ 1 yolk for glaze) (richness and glaze)
- Slivered almonds and pearl sugar — for topping (garnish)
Method
- Infuse the saffron in warm milk for 10 minutes; dissolve the yeast in it.
- Mix flour, sugar, cardamom, egg, and butter with the saffron milk; knead into a soft dough and let rise for 1 hour.
- Divide into three strands, roll them, braid, then close the braid into a wreath.
- Let rise for 30 to 40 minutes, brush with egg yolk, scatter slivered almonds and pearl sugar.
- Bake at 200°C for 20 to 25 minutes until beautifully golden; let cool slightly before serving.
How it was made : Saffron, a precious imported commodity, colored Swedish festive pastries, especially around St. Lucia and Christmas. Cardamom remained the daily spice of the bakery; together, they marked the pastry of grand occasions.
The contemporary twist : Present the whole wreath on a board, with a candle in the center in St. Lucia style; a light sugar glaze and some orange zest make it a contemporary celebration piece.
