Why this dish? Beauvoir was a passionate walker who spent entire days hiking through Provence and the South of France on foot; she carried in her bag a frugal snack of bread, cheese and fruit, which she ate along the way.

A hiker's snack: country bread, aged cheese, dry sausage, fruit and a sip of wine — everything that fits in a bag to sustain a day of walking.

Walking saved me more than once — I would set off at dawn, alone, for ten-hour treks through the hills of Provence. In my bag, only the essentials: a hunk of bread, a piece of cheese that softened in the sun, a few fruits, a flask of wine cut with water. I would eat sitting on a rock, the landscape my only company. No meal ever tasted better than that one, earned by fatigue and the mountain air.
