Why this dish? Jollof rice is cited in Funmilayo's food grounding as one of the dishes on the family table. A dish for baptisms, weddings, and large gatherings, it was the perfect choice to feed the assemblies of the Abeokuta Women's Union she led — often hundreds of women.
Long-grain rice simmered in a tomato-pepper-chili base until it turns a reddish-orange hue and develops that coveted smoky crust at the bottom of the pot. The quintessential unifying dish of West Africa.
When I received the women of the Union, it was not by tens but by hundreds, and believe me, you don't mobilize a crowd on an empty stomach! I had the big pots set up in the courtyard, and the rice took on its lovely sunset color in the sauce. The secret, my daughter, is patience: you let the bottom just catch enough for that smoky taste everyone fights over. We ate, we sang, and only then did we talk strategy against colonial power.

Ingredients
- Long-grain rice (basmati or fragrant) — 400 g (base)
- Crushed tomatoes + 2 red bell peppers — 400 g + 2 (sauce)
- Scotch bonnet chili — 1 (to taste) (heat)
- Tomato paste — 2 tbsp (color and depth)
- Peanut or vegetable oil — 5 tbsp (cooking)
- Onion, garlic, ginger — 1 + 2 cloves + 2 cm (aromatics)
- Stock (chicken or shrimp), thyme, bay leaf, curry powder — 500 ml + pinches (seasoning)
Method
- Blend tomatoes, bell peppers, chili, and onion to obtain the red base.
- Sauté a little onion in oil, add tomato paste, then the blended base; reduce for 15-20 minutes until the oil rises and the acidity subsides.
- Add spices, thyme, bay leaf, and stock; taste and salt.
- Pour in the rinsed rice, stir to coat well, cover tightly and cook on very low heat without stirring.
- Let the bottom intentionally catch for a few minutes for the smoky 'burnt' rice, then gently loosen it.
- Serve hot, optionally with grilled fish or meat.
How it was made : Jollof was cooked over a wood fire in large cast-iron pots; the uneven heat of the hearth naturally created the caramelized crust ('party jollof'). Its reputation as a festive dish stems precisely from the quantity: it was not prepared for a solitary meal but for the community.
The contemporary twist : Serve it molded into a dome in a bowl, crowned with a shard of the smoky crust placed prominently on top — the most coveted piece in the entire country.
