A tall, bright green glass: spinach or kale blended with banana, apple, lemon, and a touch of ginger. Tangy, fresh, and slightly sweet — the liquid energy of a man who runs on plants.

In the morning, before even thinking about the day's script, I make myself this tall green glass — spinach, a banana, apple, a squeeze of lemon, a knob of ginger, and you blend it all. That's my way of filling the tank without weighing on the planet. People think eating green is sad; taste this and come talk to me. One sip, and you feel the day can begin.

  • Fresh spinach or kaletwo large handfuls (green base)

How it was made : The green smoothie as we know it was born with the democratization of the home blender in the 20th century and the plant-based wave of the 2000s-2010s. Previously, leafy greens were eaten cooked or in salads — drinking them raw and blended is a recent practice.
