Reconstructed Meal (Freeze-Dried)

Freeze-Dried Shepherd's Pie of the First Woman at Cape Horn

Why this dish? Naomi carried freeze-dried meals, light and long-lasting, ideal when water and gas were scarce. Rehydrating a ready meal with a little hot water was sometimes the only culinary effort possible when seasickness or exhaustion killed any desire to cook.

Reconstructed Meal (Freeze-Dried)

A freeze-dried meal reconstituted with hot water: dehydrated mashed potatoes and minced meat that swell in minutes. Space-age cuisine applied to ocean racing.

There are days when the sea takes away even the desire to eat — queasy stomach, you just want to lie down. On those days, I bless my freeze-dried pouches. I just boil a little water, pour it in, stir, and in five minutes I have a real hot meal without dirtying a pan or wasting my precious gas. It's not a feast, but it weighs next to nothing in the lockers and keeps me going until the next watch.

Ingredients
  • Freeze-dried potatoes1 pouch (dehydrated starch)
  • Freeze-dried minced meat1 portion (dehydrated protein)
  • Powdered milkone spoonful (binder for mash)
  • Salta little (seasoning)
  • Rationed hot waterthe bare minimum (rehydration)
How it was made : Freeze-drying, perfected for military rations and the space program in the 1960s, revolutionized ocean racing: a complete meal reduced to a lightweight pouch that swells with hot water. For a solo sailor who must ration fresh water, gas, and storage space over months at sea, it was a blessing. Shepherd's pie (meat + mash) was among the comforting classics of these dehydrated menus of British inspiration.
