Why this dish? In the forests of Aceh Besar and Pidie, the guerrilla lived on little: a few garden or foraged vegetables, and especially pliek u, which could be transported and stored. A curry like this nourished Cut Nyak Dhien's fighters on days when rice was almost gone.
The most emblematic dish of Aceh: a multitude of vegetables simmered in a thick broth with pliek u, the fermented coconut residue that gives depth and noble bitterness. Frugal, complete, deeply local.
Listen well, you who have never been hungry under the trees. When rice was scarce and the Dutch burned our villages, it was this kuah that kept us standing, by the grace of God. We threw into the pot whatever the forest was willing to give us, and a good spoonful of pliek u — carefully kept, because it lasts when everything else rots. Eat it bitter and strong: it is the taste of those who refuse to bend.

- Pliek u (pressed fermented coconut) — a good handful (umami base and binder)
- Mixed vegetables (cassava leaves, young shoots, long eggplant, okra, green papaya) — as foraged (body of the dish)

Ingredients
- Pliek u (Indonesian grocery) or, failing that, toasted grated coconut + 1 tbsp shrimp paste — 60 g (umami base)
- Cassava leaves or spinach — 150 g (greens)
- Eggplant + okra + long beans — 300 g total (vegetables)
- Coconut milk — 400 ml (broth)
- Spice paste (4 shallots, 3 garlic cloves, 2 cm fresh turmeric, 2 cm galangal, 1 lemongrass stalk, 3 chilies) — 1 portion (seasoning)
- Kaffir lime leaves and Indonesian bay leaves (salam) — 4 leaves (fragrance)
Method
- Pound shallot, garlic, turmeric, galangal, lemongrass, and chilies into a paste.
- Dilute the pliek u in a little water, strain to remove hard fibers.
- Fry the spice paste, add the pliek u juice, fragrant leaves, and coconut milk.
- Bring to a simmer, then add the vegetables from firmest to tenderest.
- Simmer on low heat until the broth thickens; serve hot over rice.
How it was made : Pliek u was produced in every village: the coconut flesh was pressed, and the residue was left to ferment in the sun for several days. It was both a flavoring condiment and a preserved vegetable fat — precious in times of war and scarcity.
The contemporary twist : Served in a small bowl as an "Acehnese green curry" alongside steamed rice, sprinkled with toasted coconut to recall the origin of pliek u.
